Abstract
Small-scale food-processing facilities play an important role in converting agricultural products into processed foods for local and regional markets. Their effectiveness depends greatly on the organization of spaces for receiving, processing, packaging, storage, cleaning, and distribution. Inadequate facility layouts may result in inefficient workflows, unnecessary movement, cross-contamination, poor hygiene, and limited production capacity. Assessing the spatial organization of small-scale food-processing facilities is therefore important for creating environments that support safe, efficient, and sustainable food-processing activities. This study assesses small-scale food-processing facility layouts, focusing on the relationship between spatial organization and the sequence of food-processing activities. The study examines the arrangement of receiving areas, raw-material storage, preparation spaces, processing rooms, packaging areas, finished-product storage, washing facilities, and administrative spaces. Attention is given to the connections between these functional areas and how their arrangement influences workflow. The assessment seeks to identify layout characteristics that support efficient movement of workers, materials, equipment, and finished products. The study further considers hygiene and environmental requirements within small-scale food-processing facilities. Adequate ventilation, lighting, water supply, drainage, waste-management facilities, washable surfaces, and appropriate separation of activities are considered essential for maintaining suitable processing conditions. The layout should facilitate the progression of products from raw-material reception through processing and packaging without unnecessary backtracking or contact between clean and contaminated areas. Appropriate zoning can therefore contribute to improved hygiene control and reduced risks of cross-contamination. Worker and material circulation are also important factors in assessing food-processing layouts. The study examines pedestrian pathways, equipment positioning, service access, storage locations, loading areas, and internal movement routes. Improved facility layouts can contribute to safer food production, efficient workflows, better working conditions, and more effective utilization of limited resources.
