Abstract
Commercial kitchens generate significant quantities of organic waste, packaging materials, wastewater, and other refuse through food preparation, cooking, serving, and cleaning activities. Effective waste management is therefore an important component of commercial kitchen design, as inadequate facilities can contribute to odour, pest infestation, hygiene problems, environmental pollution, and inefficient kitchen operations. Architectural planning can provide appropriate spaces and systems for the collection, separation, temporary storage, and removal of waste. This study assesses waste management facilities in commercial kitchens, with emphasis on their adequacy, accessibility, hygiene, and functional integration. The study examines the provision of waste management facilities, including waste collection points, sorting areas, storage spaces, refuse rooms, grease traps, drainage systems, composting areas, and designated routes for waste removal. It considers the size, location, accessibility, and capacity of these facilities in relation to kitchen activities and expected waste volumes. Particular attention is given to the relationship between waste facilities and food preparation, storage, cooking, washing, and service areas to minimize conflicts and contamination risks. Spatial organization is considered a major factor influencing the effectiveness of waste management within commercial kitchens. The study examines how waste collection points can be positioned close to waste-generating activities while maintaining appropriate separation from food preparation and storage areas. Dedicated circulation routes for waste removal are also considered important for reducing unnecessary movement through clean operational zones. Effective zoning can support a clear transition from waste generation to collection, temporary storage, and final disposal. The research further assesses hygiene and environmental conditions associated with waste management facilities. Factors such as ventilation, drainage, washable surfaces, water supply, pest control, odour management, lighting, and ease of cleaning are examined. Waste storage areas require appropriate environmental controls to prevent the accumulation of unpleasant odours, moisture, and biological contaminants. Proper drainage and durable finishes are also considered necessary for maintaining sanitary conditions and facilitating routine cleaning. The study also considers waste segregation, recycling, composting, and resource recovery as components of sustainable commercial kitchen design. Separate facilities for organic waste, recyclable materials, general refuse, and potentially hazardous waste can improve waste handling and support more responsible disposal practices. The location and accessibility of these facilities may influence staff compliance with waste-separation procedures. Adequate storage capacity and convenient waste-removal access are therefore considered important for maintaining efficient kitchen operations. The study aims to assess the adequacy and effectiveness of waste management facilities in commercial kitchens and to identify architectural characteristics that support hygienic, safe, and efficient waste handling. The findings are expected to provide useful guidance for architects, kitchen designers, restaurant developers, facility managers, and environmental health professionals in planning commercial kitchens with integrated waste management systems. The study contributes to improved commercial kitchen design by emphasizing waste management as an essential component of hygiene, environmental sustainability, operational efficiency, and public health.
